Equinox Resort Spa, VT (and Backroad Discovery Tours)

Wonderful experience.  I stayed in a townhome which was easily accessible to everything.  It was huge with a modern, sleek design. It has balcony overlooking the mountains and fully equip kitchen.

The service was outstanding, making restaurant reservations for us and shuttling to and from.  The town itself is full of outlets, so we did plenty of shopping.  Our visit happen to fall upon restaurant week, so we took full advantage of that as well.

I didn’t use the actual spa services, but I definitely got use out of the gym, indoor pool, and jacuzzi located outside.  I regret not taking a in-the-pool fitness class which was no extra charge.  The resort gives you the fluffiest robes to lounge in!

The main building has a restaurant (which I didn’t try because it was pricey) and two bars.  They plan activities but my favorite was drinking by the bonfire.

They make the BEST apple cider doughnuts you will ever taste.

And if you are staying in the area you HAVE to check out Backroad Discovery Tours. I loved the tour guide; she was more like a friend.  We touched upon everything we hoped for, like local histories as well as syrup tasting and cheddar cheese! We even got to play with animals.  I definitely recommend this to anyone visiting the area. Make sure you wear comfortable shoes!

Great escape from the city congestion, and a wonderful long week to take in the fall.  Or have a wedding! Keep an eye out- this place is always popping up on TravelZoo.

Pumpkin Errything (and Tobi PROMO)

Up until last Fall, I ASSUMED I hated the taste of pumpkin.  I blame those ugly goopey looking pies!  But, after pumpkin picking and enough years of carving, I decided to puree one. I baked some doughnuts and you know?!?! Pumpkin really doesn’t have that strong of a flavor… so I’ve been LOVING it this year… thank you Dunkin Donuts!!

Here’s a quick and easy recipe I feel like sharing 🙂 It was a HUGE hit…even for my boyfriend who is still anti-pumpkin in his head.

Pumpkin Spice Cream Cheese Breakfast Rolls!!!!!!!!!!!

2 packages/cans Pillsbury Crescent Rolls

4 0z cream cheese, softened

1/4 Cup brown sugar

1/4 Cup canned pumkin (Libby’s)

1/4 teaspoon ground cinnamon

1/8 teaspoon fresh ground nutmeg

1.  Preheat oven to 350 degrees F.  Unroll crescent rolls to form 4 rectangles placed side by side.  Pinch seams together to form one long rectangle.  Place cream cheese, brown sugar, pumpkin, cinnamon and nutmeg into a mixer; beat until well combined.  Spread mixture over crescents leaving a 1/2 inch border around edges.  Starting at long end, roll up then cut into 1 inch pieces.  Place around 2 9 inch cake pans that have been sprayed with cooking spray.  I left the centers open so the rolls form a circle.

2.  Bake for 28-30 minutes or until rolls are golden brown.  Remove and let cool for 10 minutes.  Frost warm rolls with cream cheese frosting recipe below.

Frosting

4 oz softened cream cheese

1/2 Cup powdered sugar

1/2 teaspoon vanilla

1 Tablespoon canned pumpkin

1.  Mix all ingredients into a large bowl until smooth.  Spread over warm rolls.

I may add more pumpkin than the original recipe calls for… it’s all trial and error!  Keep posted, I have some ideas for the rest of the pumpkin that I’m hoping ends up good enough to share 🙂

For my brother-in-laws birthday we spend the day BBQing and swimming.  Now I don’t know if you’ve ever been to an off the boat Italian families BQQ- but these people go HARD. It’s all about food, family, wine, and fun!

For starters we had the BEST homemade olive focaccia is aunt from Brooklyn is famous for.  We had guacamole  bruschetta, fresh mozzarella, and an arugula salad.

The menu consisted of ribs, steak, chorizo sandwiches, and an assortment of grilled veggies.

And soo much more but the important part of the meal-

I’m normally totally happy with something rich and chocolaty but this pear and ricotta was mention worthy.  My sister picked it up at a place in Wayne (NJ.)

Ok, so I know I know I know, this outfit is just too cute.  And the top,skirt, and belt is all one!  Rachael & Chloe makes it in this blue or cream. I really wanted the cream…but an almost white skirt at a BBQ? Let’s be serious.
